Okay, July 30 was National Cheesecake Day, but I was not inspired and it was hot and steamy. So, I made a refreshing

 

Lemon Mint Fizz

Serves 2

 

4 oz vodka

2 mint sprigs

1/4 cup simple syrup

2 lemon peels

lemon seltzer

lemon twist

mint leaves

 

Muddle the mint and lemon peels in the syrup. Add the vodka and shake with ice. Pour into a rocks glass and top with seltzer and garnish with a lemon twist, and mint.
